Food process monitoring and product quality assessment: In vitro quality assessment with human smell, taste and gut receptors.

The aim of the project is to explore methods to quantify the response of receptor proteins that are involved in the recognition of food ingredients in the nose, mouth and gastro-intestinal tract. In this project a microfluidic flow cell is developed in which the receptors are immobilized.
